Job Description

Proper Hospitality is seeking a Director of Food & Beverage at Montauk Yacht Club, our 107-room luxury property within The Collective.

Spanning 35 acres on Montauk’s Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities.

As the Director of Food & Beverage, you will be a strategic leader with a passion for delivering exceptional dining experiences to our guests. Your oversight will include all aspects of our food and beverage operations, ensuring the highest standards of quality, service, and profitability.

Job Responsibilities:

Strategic Leadership

  • Develop and execute the food and beverage strategy in alignment with our property’s objectives
  • Continuously analyze market trends and competitor offerings to identify opportunities for growth and improvement
  • Set and achieve revenue and profitability targets while maintaining a strong focus on cost control

Team Management

  • Recruit, train, and mentor a team of talented culinary and service professionals
  • Foster a positive and collaborative work environment, promoting colleague development and motivation
  • Ensure all staff members adhere to high standards of service and professionalism

Dining Experience Excellence

  • Oversee the creation and execution of innovative and appealing menus in all food and beverage outlets
  • Maintain the highest standards of food quality, presentation and guest satisfaction
  • Regularly review guest feedback and take proactive steps to address any concerns or suggestions

Financial Management

  • Develop and manage the annual food and beverage budget
  • Monitor financial performance, analyze variances and implement corrective actions as needed
  • Optimize revenue through pricing strategies, promotions and upselling opportunities

Compliance & Safety

  • Ensure compliance with all local health, safety and food handling regulations
  • Implement and maintain food safety and hygiene standards throughout the operation
  • Conduct regular inspections and audits to ensure the highest levels of cleanliness and safety

Event Management

  • Oversee the planning and execution of special events, banquets and private functions
  • Collaborate with the sales and marketing team to attract events and group bookings
  • Ensure flawless execution of events, exceeding guest expectations

Vendor Relationships

  • Establish and maintain strong relationships with food and beverage suppliers and vendors
  • Negotiate contracts, manage deliveries, and monitor product quality and pricing
  • Identify opportunities for cost savings and efficiency improvements

Qualifications

  • Bachelor's degree in Hospitality Management or related field
  • Minimum of 5 years of progressive leadership experience in food and beverage management, preferably in a luxury hotel or resort setting
  • Strong financial acumen with a proven track record of achieving revenue and profit targets
  • Excellent interpersonal and communication skills
  • Creative and innovative mindset with a passion for culinary excellence
  • Knowledge of industry trends, regulations, and best practices
  • Ability to work flexible hours, including evenings, weekends and holidays
